Recipe of the month: Quick and Easy Chicken Tray Bake

Today I wanted to share with you possibly the easiest (and certainly very tasty) healthy meal ever!

I know it can be difficult in modern society to create healthy food the whole family will love all the time. After a full day at work it can be hard to think up new recipes too. That's why I think this recipe rocks! You prepare it, which takes hardly any time at all, whack it in the oven whilst you have time to have a shower or put your feet up. Then, once served there's hardly any washing up too, what's not to love?

Ingredients:
1 courgette
1 carrot
3 small red onions
2 small sweet potatoes
1 green pepper
Garlic (cloves or chopped) 
Mushrooms
Chicken thighs
Garlic olive oil
Salt and pepper
Balsamic vinegar

(You can tailor the vegetables to suit your taste and also can use chicken breast instead of thigh, however, thighs do bring out a deeper flavour and are cheaper too (bonus point!)

Foil to line pan (to minimise washing up!)

Ok, so you wash and chop all the veggies, toss into the foil lined pan, top with the chicken and drizzle with the oil, seasoning and balsamic vinegar. Simple as that! Pop it into a preheated oven at 190°c (fan oven) and cook for 40 minutes, or until it looks like the picture below. 

Spoon into dishes to serve.
